Avocado & Biscuit - Yes Please!

A new take on an old favorite - a breakfast recipe that will nourish the body and feed the soul!


Let's add a little twist to a very well known dish called avocado and toast. Keeping all the essentials but turning this recipe up to 11 with a few add ons and flavor enhancers!


We'll start by adding a little flake and thickness with a homemade biscuit, a little crunch and savorousness with some onions and bacon, then topping it off with a golden glow with some fried egg goodness!

Ingredients:


  • Avocado: ½

  • Biscuits (homemade or store bought): 1 whole

  • Bacon: 2 - 3 slices

  • Onion or Shallots: ½ onion or 1 whole shallot

  • Egg: 2 eggs

  • Salt & Pepper: to taste


Steps:


  • Dice onions and place off to the side


  • Slice Bacon and place into a skillet. Place the skillet on the stovetop and cook on medium high.


  • Once bacon begins to brown, place onions into skillet and saute with bacon until bacon is crisp and onions are translucent.


  • As bacon and onions cook, take another pan and heat it up on medium low. Place butter into pan and allow butter to melt, once fully melted place biscuit facedown in pan so it can brown and toast. Once browned to your liking, take out of the pan and place on a plate. Continue to stir onions and bacon periodically for even cooking.


  • Once onion and bacon are done, take out of the skillet and place the combo off to the side in a bowl.


  • Place the skillet back on the stovetop and turn the heat to high.


  • Place bacon additional grease into the skillet (enough to coat the bottom) if needed.


  • Once the pan begins to smoke, crack an egg into the pan and begin to fry. As egg fries season with salt and pepper.


  • Once the egg has fried on both sides, place on a wire rack to drip and cool.


  • As your egg cools, cut avocado in half and cut into long slices. Use a spoon to lift the avocado out and place on top of both biscuit ends.


  • Garnish biscuit and avocado with onion and bacon combo, then finish with a fried egg on top.


  • Add any additional seasoning if needed, serve, and enjoy!
